Chicken Curry with Potatoes

Yesterday I was really hungry for Indian food. I decided to try and make Chicken Curry with Potatoes in the crock pot. I had a head of cauliflower so I roasted that to go with it. It was a huge hit.

The girls all had three helpings. Here is the recipe:

Ingredients:
3 pounds chicken (I used boneless skinless thighs this time but have also used boneless skinless chicken breasts in the past)
1 large onion diced
1 can low sodium diced tomatoes
3 cloves garlic minced
1 tsp ginger powder
1 tsp dried cilantro
1 bay leaf
1 tsp cardamom powder
1 tsp cinnamon
1 tsp ground coriander
1 tsp cumin
1 tsp garam masala
1/2 tsp turmeric
1 tsp sea salt
1/2 tsp ground pepper
3 cups low sodium chicken broth
6 large potatoes diced

Directions:
1. Place diced potatoes in the bottom of the crock pot.
2. Cover with diced onions.
3. Mix all the spices in a bowl.
4. Rub spice mixture on raw chicken.
5. Pour chicken and spice mixture over potatoes/onions in the crock pot.
6. Pour the chicken broth over everything.
7. Pour the can of diced tomatoes juice and all in.

8. Cook on low for 6 hours
 
I served this by itself but I am sure you could serve over brown rice if you wanted. I like the sauciness of it. Also it you are short some protein for the day you can always add some Low Fat Greek Yogurt to give it some creaminess and some extra protein.
