The girls really wanted pancakes yesterday so I decided to make them a healthy whole wheat version.
This is the first time I tried these and was worried they'd turn out a little flat, but they were so light and fluffy.Ingredients:
2 cups whole wheat flour
4 1/2 tsp baking powder
1/2 tsp salt
1 tbsp cinnamon
2 tsp coconut sugar or honey
2 large eggs
2 cups vanilla almond milk
2 tsp vanilla
cooking spray
Directions:
1. Mix all dry ingredients in a single bowl.
2. Slowly add the wet ingredients to the dry ingredients.
3. Mix well until all the dry ingredients are wet.
4. Heat a large skillet on medium heat
5. Spray with cooking spray
6. Add 1/4 cup of batter onto skillet to make 4 inch round pancakes
7. Cook on one side until the batter is bubbling
8. Flip and cook another few minutes until done.
9. Do with the remainder of the batter
I used some frozen berries from SAMS Club that I defrosted as "syrup". As they defrost they have a nice sauce and don't need any extra sugar.
The girls absolutely loved these.
