Curry Chicken

We tried something new for dinner tonight and there isn't any leftovers so it must have been good. Brian came up with a curry spice blend that all the girls absolutely loved. I hope you enjoy this dish as much as we did.

 
Tandoori inspired sautéed chicken with curried vegetables
Ingredients Chicken
1 Tbsp. Curry Powder
1 tsp. Paprika
1/2 tsp. Coriander
2 tsp. Garlic Powder
1 tsp. Ginger Powder
1-1.5 Tbsp.. Cumin
2 lbs. Chicken diced
 
Ingredients Vegetables
2 head Broccoli
1 Red Bell Pepper
1 Orange Bell Pepper
1 Medium Onion
2 Tbsp. Curry Powder
2 tsp. Garlic Powder
2 tsp. Onion Powder
 
 
Extra
2 cups raw Brown Rice
 
Directions:
1. Cook rice per package instructions
2. Place chicken and all spice under chicken ingredients in a medium sauté pan on med-high heat.
3. Cook until brown
4. Place vegetables in a large pan and cover.
5. Cook on medium high heat until cooked through
6. Add spices and mix thoroughly.
 
One 21 Day Fix serving includes 3/4 cup chicken, 1 cup vegetables, 1/2 cup rice. This will fulfil one red, one green and one yellow container for the day.
